Profiteroles with cream cheese and salmon
We will need:
- creamy curd cheese - 300 gr
- cream 35% -50ml
- lightly salted salmon - 300 gr
- red caviar - for decoration
- dill - bunch
- salt, pepper - to taste
Preparation:
1. Profiteroles can be baked in advance, or you can purchase ready-made ones.
2. Creamy curd cheese can be used from Hohland or Almette brands. Beat cheese with cottage cheese. Add chopped dill, leave a little for decoration, salt and pepper to taste. Beat until smooth.
3. Cut off the tops of the profiteroles. Using a pastry bag, fill them with the mixture.
4. Thinly slice the salmon (salmon can also be used) and roll into a rose shape.

4. Grind the cottage cheese and remaining cheese through a sieve, add chopped garlic, butter. Add salt to taste and stir.

- egg - 4 pcs
- potatoes - 3 pcs.
- carrots - 1 pc.
- cucumber (fresh or canned) -2-3 pcs (depending on size)
- green onion - bunch
- green peas (canned) - 0.5 cans
- mayonnaise - to taste
- salt, pepper - to taste
Preparation:
1. Boil carrots, potatoes and eggs, cool, peel and cut into small cubes. Try not to overcook vegetables so that when cutting, the cubes have a shape and do not fall apart.
2. Boil the meat in salted water, cool and cut into small cubes.
3. Cucumbers for salad can be used either fresh or canned. We also cut the cucumbers into cubes.
We try to cut all the ingredients for the salad to approximately the same size and shape. This will make him look more attractive.
4. Place all chopped ingredients in a large bowl. There is no need to stir anything.
5. Add chopped green onions to the salad.
6. Add green peas, from which we carefully drain all the water.
7. Add salt and pepper to taste, mix.

And the Master of the Year, Rooster, is not a fan of fatty foods, so sour cream will be just right.
6. Let’s prepare a suitable mold, it’s better to take a silicone one. It will be easy to get a chilled salad out of it. If you don’t have such a form, then cover the salad bowl with cling film. We begin to form our salad. Place a layer of salmon on the bottom, then herring. Layer with sour cream and gelatin.
7. Then the next layers are eggs, carrots and beets. Salt each layer and carefully layer it with a mixture of sour cream and gelatin.
8. Cover the top layer with cling film and place in the refrigerator until completely cool.

4. Place cling film of the required size on the table.
5. Lightly squeeze the beets and drain off excess juice. Lay it out as the first layer. Cover with another piece of cling film and press with your palms. Add a little salt.
6. Place carrots in the next layer. Step back two centimeters from the edge with the beets, and lay them out in a separate square. Salt this layer again and coat it with mayonnaise. Do not grab the edges with the beets.
7. Next comes a layer of potatoes. It should also be smaller than the carrot layer. Each time the square gets smaller. Seal this layer through film, add salt and coat with mayonnaise.
8. The next layer is the egg layer, it should also be smaller than the potato layer. Press it lightly again, then salt and coat with mayonnaise.
9. Place a wide and tall strip of chopped herring in the very center. In terms of volume, it should take up approximately 1/3 of the size of all laid out layers.
10. Roll everything into a roll using film.

We will need:
- meat - boiled beef 150 gr.
- potatoes 250 gr.
- carrots - 150 gr.
- pitted prunes - 100 gr.
- walnuts - 100 gr.
- raisins - 50 gr.
- mayonnaise - 150 gr.
- greens for decoration
- salt - to taste
Preparation:
Boil the meat, add salt to the broth half an hour before it is ready. Cool. Cut into strips.
Boil the vegetables.
Vegetables can be grated on a coarse grater or cut into small cubes (optional)
Place in layers either in a transparent salad bowl or on a large platter lined with green lettuce leaves.
Lay out the layers in this order. Place potatoes down, then carrots, then meat. Lightly salt the potato layer and brush with mayonnaise.

And Mimosa never stagnates on the table. Even when there is an abundance of other salads on it, this one is eaten first!
This salad would also be good for the New Year's party. And don’t let its spring name confuse you. Giving it a New Year's look and decorating it with improvised Christmas decorations it will not go unnoticed on the holiday table.

- canned saury - 1 can
- potatoes - 3 pcs.
- carrots - 2 pcs.
- eggs - 4 pcs.
- mayonnaise - to taste

Preparation:

- canned tuna - 2 cans
- eggs - 2 pcs
- potatoes - 4-5 pcs
- carrots - 1 piece (large)
- onion - 1 pc (small)
- canned peas - 0.5 cans
- lemon - 0.5 pcs
- lettuce leaves or greens - for decoration
- salt, ground black pepper - to taste
- vegetable oil for frying
- vinegar - 1-1.5 teaspoons
As you can see, this composition of products is as simple as two or two. You don't even need to buy anything special. All products are quite affordable and almost everyone has them in their refrigerator. Is it possible that not everyone has tuna, but that’s not a problem. You can buy it without any problems in any store.
This salad is also easy, simple and quick to prepare. Even those who have never cooked anything can cope with its preparation.
Preparation:
1. Grate the carrots using a Korean carrot grater. And salt it a little. Try it. Carrots should be salted, but not over-salted. Stir and press a little. Pepper on top. Leave for 1 hour so that the carrots are thoroughly salted.
2. Cut the onion into half rings.
In 0.5 cups cold boiled water add a little vinegar to taste. You can add 1 teaspoon, or 1.5.
If acidic foods are contraindicated for you, then simply cut the onion into small cubes and pour water over it to remove the bitterness.
Leave the onion to marinate for 1 hour.
3. During this time, we will prepare the potatoes. It must be cleaned, then cut into two halves. Cut each half into elongated triangles - slices, preferably of the same size and thickness. Cut it in such a way that it looks beautiful. When everything is beautifully prepared, then the salad as a whole will look beautiful and appetizing.
4. Pour vegetable oil into a frying pan, or better yet into a cauldron. Warm it to a bluish haze. And fry the potatoes in small portions. Each portion will fry for 10-15 minutes, depending on how thick you cut the potatoes.
During the frying process, the potatoes should be stirred periodically with a slotted spoon. This is necessary so that it is fried evenly and covered on all sides with a beautiful crispy crust.
If desired, you can first boil the peeled potatoes, and then cut and fry.
But I prefer the first option. I find these potatoes tastier!
5. In both cases, remove the fried potatoes with a slotted spoon, allow the oil to drain a little and then place on paper towels. To prevent excess oil from getting into the salad.
6. Allow the potatoes to cool.
7. Boil the eggs, let cool and cut into cubes.

You can also add mayonnaise to the sauce if you are a fan of it. The quantity can be varied. But I'm not a big fan of mayonnaise. A salad without mayonnaise turns out to be less calorie and very tender, with a pleasant, slightly sour taste.
17. Decorate as your imagination dictates.
18. Place in the refrigerator. Let stand for 30-40 minutes so that all ingredients are soaked in the sauce and cool slightly.

- boiled beef or veal - 350-400 g
- raw potatoes - 2-3 pcs
- eggs - 7 pcs
- pickled cucumbers - 2 pcs.
- champignon mushrooms, or any other, marinated - 200 gr
- green peas - 100 gr
- cheese - 70 gr
- mayonnaise -6-7 tbsp. spoons
- garlic - 1 clove
- salt - to taste
- sunflower oil - for frying potatoes
- lettuce, dill, parsley - for decoration
- ground black pepper - optional and to taste
- cherry tomatoes -3-4 pieces for decoration
The recipe also uses pancakes. You will need to bake 2-3 of them.
For pancakes:
- flour - 2 tbsp. spoons
- milk - 100 ml
- egg - 1 pc.
- sugar - 0.5 tbsp. spoons
- vegetable oil - 1 teaspoon
- soda - on the tip of a knife
- salt - a pinch
As you can see, no chicken. But there are pickled mushrooms and lightly salted cucumbers. And we even baked pancakes especially for the coming Year of the Rooster!
Preparation:
1. Make dough for pancakes. Let it sit for 30 minutes to allow all the ingredients to combine.
2. Fry 2-3 thin pancakes.
3. Cool the hot pancakes a little, fold them in half and roll them into a tube. Then cool completely. Once cooled, cut into thin slices as we cut the roll. Then the pancake will roll out and you will get long narrow strips.
4. Cut the cucumbers into thin strips.
5. You will also need to boil the meat in advance. Cook it over low heat. There is no need to add salt throughout the cooking process so that the salt does not draw out all the tasty juice from the meat. Add salt 10 minutes before the end of cooking. Cool the finished meat and cut into thin strips.
We try to cut all ingredients approximately the same thickness and length. Since we will build a nest from them, it is better to cut them in the form of twigs, that is, into strips.
6. Eggs should be boiled and also cooled. Then separate the whites from the yolks. Cut the whites into thin strips.
7. We will also need mushrooms. We use marinated mushrooms. Usually everyone uses champignons, and they are no worse in salad than the rest. So, we also cut the mushrooms into strips, to match other products.
8. Another important step in preparation is to prepare the blank for the nest itself. And we will build a nest from French fries.
To do this, cut raw potatoes into very thin strips. Sometimes it is recommended to grate potatoes for Korean carrots.
9. Once the potatoes are cut, they need to be fried. To do this, heat the oil in a cauldron or frying pan, and place the potatoes there in small portions and fry, stirring constantly.
10. In a large bowl, combine cucumbers, meat, mushrooms, egg whites and pancakes, cut into strips. Add canned green peas, from which the brine has been carefully drained.

14. Grate hard cheese on a fine grater, I use Russian cheese. Chop the garlic and mix with mayonnaise. Place some mayonnaise in a small cup. Dip the yolk in mayonnaise and roll in the cheese-garlic mixture.

1. Place lettuce leaves on a large flat dish or plate.
2. Place the ingredients mixed with mayonnaise on the leaves in the form of a small mound. We make a small depression in the center where we will place the eggs.

Salad “Roses for your loved one”
Don’t look at the fact that the name of the salad is not at all New Year’s. It is always a pleasure to receive roses from your loved one, be it in winter or in summer! Moreover, they are so beautiful!
This salad is similar to the previous one in that we prepare those same roses from freshly baked pancakes. To make the roses red, the cut pancakes will need to be dyed red using beet juice.
There is one feature in this salad that you cannot forget about if you decide to cook it. Originally it is made from chicken fillet. Therefore, we will prepare it unconventionally, replacing chicken with meat, or smoked sausage, or brisket. You can use boiled tongue, or even take a little bit of everything.
We will need:
- boiled breast 300-400 gr. (we unconditionally replace it with boiled or smoked meat)
- boiled potatoes 3-4 pieces
- boiled carrots 2 pieces (medium)
- 2 pickled cucumbers
- half a can of green peas
- bunch of green onions
- bunch of greenery
- mayonnaise to taste
For pancakes:
We will need:
- 2 eggs
- 1 tablespoon sugar
- salt on the tip of a knife
- 1/3 teaspoon baking soda
- 2 tablespoons flour
- 100 ml. milk
- 1 clove of garlic
As you can see, the composition of the products is also quite simple. And what a beauty it turns out! So take note of this salad, especially if you have never prepared it!
Preparation
Pancakes for Roses:
1. Mix eggs with sugar.
2. Add salt and soda to the flour and mix.
3. Combine flour with a mixture of eggs and sugar.
4. Slowly stir in the milk.
5. Let it sit for a while so that the lumps disperse.
6. Bake 4 thin pancakes.
7. While the pancakes are warm, grease them on one side with mayonnaise, adding finely chopped garlic to it in advance.
8. Roll the pancakes tightly into a roll, greased side inward.
9. Let it cool, then cut it into pieces of about 1 cm. You get small, rolled rolls.
Preparing the salad “Roses for your loved one”
Now let's start laying out the salad. We take a salad bowl with high sides and line it all with cling film.
1. Place the cut rolls - “roses” on the bottom and sides.
2. Finely chop the potatoes into cubes and mix with mayonnaise.
3. Take 2/3 of the potatoes and place them on top of the “roses”. Press down a little with your hand and coat with mayonnaise.
4. Cut carrots, pickled cucumbers, and chicken into small cubes. We cut the green onions as usual for salad.
5. Lay everything out in layers in this order - chicken breast, cucumbers, green peas, carrots, green onions and the remaining potatoes.
6. We add salt to each layer as needed and to taste, coat it with mayonnaise as much as you like, but it’s better not to overdo it, otherwise sometimes they put so much mayonnaise in the salad that the taste of other products is not even felt.
7. Cover the top with cling film and place in the refrigerator for 12 hours. Let it now insist and gain strength.
When serving the salad, take a large, flat plate or dish. Remove the film from above. Place a flat plate on the salad bowl and simply turn it over. Remove the film from the “roses” and decorate the edge of the plate with finely chopped herbs and the remaining onions. That's it, your “Roses for Your Loved One” salad is ready! Beautiful and delicious! Let your loved one be happy.
The next few salads are based on chicken fillet. But don’t be tempted, resolutely change it to meat.
Salad “Pomegranate bracelet” with walnuts
This is another favorite holiday salad for many. And of course, it is very often prepared for the New Year’s table! And this year they will prepare it even more so, because it contains pomegranate. Which, both in color and taste, is highly recommended for the coming Year of the Rooster!
What do we need for this:
- chicken fillet - 350 gr. (exchange for boiled meat)
- carrots - 3 pieces
- potatoes - 3 pieces
- beets - 3 pieces
- onion - 1 piece
- egg - 2-3 pieces
- pomegranate - 1 piece
- walnuts - 100 gr.
- mayonnaise - to taste
- vegetable oil - 1 tbsp. spoon
Preparation.
1. Pour cold water over the eggs, if they are from the refrigerator, let them stand for 20-30 minutes. Then add half a tablespoon of salt and boil for 8 minutes. Drain the hot water, put it under the tap under cold water, let the water run a little. Then pour cold water and leave the eggs in the water for a while to help them clean better.
2. Boil potatoes and carrots. Potatoes will cook for 30 minutes, carrots a little faster.
3. The beets can also be boiled, but to make it faster, I boiled the beets in the microwave. To do this, pour a glass of water into a special glass container for the microwave. Wash the beets thoroughly, pierce them in several places with a fork, put them in a container with water, and cover with a lid. Set to “Vegetables” mode for 8-10 minutes. Then turn the beets onto the other side and repeat the procedure.
4. Wash the chicken fillet, put it in water and boil in salted water for 25-30 minutes. Then take it out and put it on a plate to drain the liquid and dry the chicken. You will need to remove the skin from the fillet and cut it into thin strips, or maybe into cubes. Who likes it more?
5. Finely chop the onion, pour a spoonful of oil into a frying pan and fry it until golden brown. Then pour half a glass of boiled water, and without turning down the heat, let the water boil, stirring the onion periodically. As soon as all the water has boiled away and you see that the onions have begun to fry again, turn off the gas, cover the onions with a lid, and leave it like that. Water and then a closed lid will help our onions not crunch on our teeth when we eat the salad.
6. Pour the nuts into a deep bowl and crush with a masher. You can grind it in a blender, but it will take longer to wash and clean it up. You can pound it quickly with a masher, and you can better control the size of the resulting crumbs. The crumb should not be very small, so that it is pleasant to chew the nut when you catch it in the salad.
7. When the vegetables have cooled, they need to be grated on a coarse grater. All on separate plates. Peel the pomegranate and separate it into grains.
8. We do all the above steps in parallel, and after 50-60 minutes, we have all the ingredients ready. Now prepare mayonnaise, salt and pepper. As well as a large flat plate and glass. That's it, now we are ready for creativity, we will create our salad and put into it the most basic component - our Soul!
9. Place an inverted glass in the center of a flat plate. We lay out the first layer around it in a circle - chicken (meat). On top of this layer we make a thin mayonnaise mesh. In order for the mesh to be thin, you must first remove the mayonnaise from the refrigerator, it will warm up a little and will be squeezed out in a thin stream. It is necessary that all layers are saturated with mayonnaise.
10. On top of the meat (chicken) is the next layer - carrots. When you put it out, add salt and pepper to taste.
11. Now it's time for nuts. We only need to lay out half of them, the rest will be useful to us. Now again a layer of mayonnaise. Yes, a mesh would be appropriate here.
12. We've dealt with mayonnaise. Now lay out the potatoes. It should be salted and peppered to taste. and of course, also grease with mayonnaise.
13. Next, lay out a little less than half of the beets, lightly salt them.
14. Place the fried onions on top of the beets, slowly moving them evenly downwards. And the remaining nuts. Again you will have to suffer and spread mayonnaise over the unruly nuts. But be careful, get the mayonnaise in advance, then you’ll just draw a mesh and that’s it.
15. So, we still have some eggs left! We lay them out, don’t forget to add salt. It's good that you don't need mayonnaise.
16. Lay out the remaining beets and distribute them well throughout the circle. Now add the last layer of mayonnaise. There shouldn't be too much or too little. If there is too much of it, then the most important decoration in the form of pomegranate seeds will drown in it, and if there is not enough, then they will not hold on and will fall off. Therefore, first grease it a little, put a few grains, if it holds well, then there is enough mayonnaise.
17. Well, as you already understood, the last layer is pomegranate seeds. If you have time, you can lay them out in even rows, grain by grain. And if not, then just take a little grain in your palm and distribute it over the entire surface of the salad.
18. When finished, carefully remove the glass. You can leave the inner circle in such a way that the layers are visible. But in the correct version, this part should also be greased with mayonnaise and covered with pomegranate seeds. A bracelet is a bracelet.
19. Now that our salad is assembled and stands in all its splendor, the temptation is great to eat it right away. But there is no need to rush. The salad should sit for at least 8 hours. He needs to be thoroughly soaked. Therefore, we will put it in the refrigerator for this time. We spent two hours preparing it, we'll wait another 8 for it to be ready!

Salad “Mushroom Glade”
This salad is like in a fairy tale about 12 months. It’s as if it’s winter outside, but then the month Augustus hit the ground with his staff, and a family of mushrooms grew on a lawn covered with green grass.
This is such a little hello from the summer. To prepare it, we use whole pickled mushrooms. For this we take either champignons or honey mushrooms.
We will need:
- chicken breast - 1 piece (replace with meat)
- potatoes - 3 pcs.
- carrots - 1 pc.
- hard cheese - 150 gr
- eggs - 2 pcs
- pickled cucumbers - 3 pcs.
- fresh cucumber - 1 pc.
- marinated champignons - 1 jar
- pickled honey mushrooms - 150 gr
- mayonnaise - to taste
- dill - bunch
- salt - to taste
- vegetable oil - for greasing the salad bowl
Preparation of products:
1. Boil the meat. Then take it out and put it on a plate so that all the juice drains from it.
2. Boil potatoes, carrots and eggs.
3. When the vegetables have cooled, grate the potatoes and carrots on a coarse grater.
4. Either grate the eggs or cut them into small cubes using an egg slicer.
5. Grate the pickled cucumbers using a Korean carrot grater, or cut into very small strips.
6. Also grate the cheese.
7. Cut the meat into small strips.
8. Finely chop the dill.
9. Place the champignons from the jar in a colander to drain all the water.
10. Prepare a deep salad bowl, grease it with vegetable oil and line the inside with cling film so that long edges remain. We will cover our salad with them.
Preparation:
Now that everything is prepared and we haven’t forgotten anything, we begin to create our masterpiece.
1. Select champignons and form the mushrooms directly in the clearing. We place them with their caps down directly on the film; you can place larger mushrooms in the center and smaller ones towards the edges. In general, as your imagination tells you.
2. Our next layer is greenery, this is the same mushroom clearing.
3. Then cheese, eggs. Lightly add some salt to the eggs and grease this layer with mayonnaise. Some people like more mayonnaise, some less, so we add it to our taste.
4. Now we will have carrots, and then meat. We also grease this layer with mayonnaise.
5. Then add pickled cucumbers and potatoes, which we also salt and grease with mayonnaise.
As you may have noticed, we lubricate the ingredients with mayonnaise through a layer. I do this so that the salad is not too greasy. But if you want, you can lubricate each layer with it!
Let's put it this way classic version. But I also add one layer between the carrots and the meat. I make this layer from canned mushrooms, which I collected in the forest in the summer and marinated.
6. If you also have such a treasured jar, then do not regret adding finely chopped mushrooms to the salad. The taste of the salad will be simply amazing. Any mushrooms will do - porcini mushrooms, boletuses, honey mushrooms, and saffron milk caps. Today I add honey mushrooms to the salad.
Well, if you don’t have such a jar, it doesn’t matter... add the remaining champignons, or just skip this layer. In principle, it will be delicious!
One more nuance. If you are not a fan of mayonnaise, then the layers can be greased with sour cream. And I like to mix sour cream with mayonnaise in a ratio of 50% to 50%, and grease the layers with this mixture.
7. Cover the last layer with film. And put it in the refrigerator. The salad must be infused for at least 10 hours.
Instead of champignons, you can use honey mushrooms and the salad will then take on a new look. beautiful view and a completely different taste. But I must tell you that this taste is not worse at all than the previous one.
Innings:
Before serving, prepare a large flat dish. We beautifully place green lettuce leaves on it.
Holding them with your hand, cover the salad bowl and turn them over.
We cut fresh cucumber into slices and decorate the sides of the salad with it. You can add a little more dill or other herbs.

Sunflower salad with chips and mushrooms
Another hello from the summer! And this summer guest is also welcome and frequent on the New Year's table! It is loved for its original execution, delicate and refined taste. Just everything that the Red Rooster loves!
Also, as you know, the Rooster really values simplicity and does not waste money in vain. The composition of the products is all very simple. But the salad doesn’t suffer at all from this. The ingredients are selected in strict accordance, they are balanced. Everything comes together perfectly, and “Sunflower” turns out like no other!
We will need:
- chicken breast - 300 g (replace with boiled meat)
- mushrooms - 300 gr
- onion - 1 pc.
- eggs - 5 pcs
- cheese - 150 gr
- olives - 0.5 cans
- chips - 0.5 cans
- mayonnaise - to taste
- sour cream - to taste
- vegetable oil - 2-3 tbsp. spoons
- salt, ground black pepper - to taste
Preparation:
1. Boil chicken breast (meat) in lightly salted water. Cool, remove the skin if you are using unfinished fillets, and cut into small cubes or small strips. Whoever wants it.
2. The second main component is mushrooms. Today I have fresh forest mushrooms. Of these, the salad turns out to be the most delicious. In addition, such mushrooms also have a wonderful forest aroma, which is also important.
3. Mushrooms must be cleaned of forest debris. And also clean the leg by scraping it and removing the dark layer. Cut into large pieces. Then fill them with water and let them cook.
As soon as the water boils, note the time and boil with light salt for 10 minutes. During this entire time we remove the foam.
4. Then put the mushrooms in a colander and let the water drain.
5. Onion - a small head, also cut into smaller cubes and fry in oil. Pour a couple of tablespoons of oil into the pan first, if it’s not enough, add another spoon.
6. Fry the onion until slightly golden; do not overfry. And immediately add the mushrooms. Reduce heat and fry onions and mushrooms for another 10 minutes. Place on a flat plate to cool quickly. Then cut into small cubes.
7. Boil the eggs until cooked. Separate the whites from the yolks. Grate the whites on a coarse grater, and the yolks on the finest grater. Try to choose eggs with a bright yolk for the salad. Then the salad will look like a real sunflower - bright and colorful!
8. Grate the cheese on a coarse or medium grater.
9. Cut the olives into two halves. These will be the “seeds” of our sunflower.
10. Prepare mayonnaise and sour cream. You can make a salad only with mayonnaise. I will do it 50/50, mixing sour cream and mayonnaise. So, the salad will turn out to be less calorie and more tasty, because two dressings are always better than one.
11. And finally, chips! The product is not very useful - but art requires sacrifice! To create such a culinary masterpiece, chips are needed. In the end, if you are completely against them, then when you eat, just put them aside. This is easy to do; the chips do not mix with the salad in any way. We will have this decor, namely, sunflower petals.
Well, everything is prepared, all that remains is to prepare a large flat plate or dish. The salad will not fit on a small plate, I warn you right away, pay attention to this!
Preparation:
1. Our first bottom layer is chicken fillet or meat. But before we put it on the dish, mix it with mayonnaise and sour cream in the bowl in which we have it.
This will allow each piece to be soaked in the sauce while the salad is infused. If you mix it right away on the dish, it will be ugly, smeared and smeared.
Therefore, we mix the meat with sauces on a separate plate, and then carefully place it in the dish on which we will serve. Let's pepper this layer a little to give the salad additional flavor and some touch of piquancy.
2. Place the next layer of cooled mushrooms and onions. We will not lubricate this layer with anything; it is already lubricated with oil. If there is oil left at the bottom of the plate on which the mushrooms were lying, there is no need to pour it out. The mushrooms and onions had already taken as much oil as they needed.
There is no need to press the layers. Lay out the ingredients loosely as they appear. The layers will compact themselves while they are soaked, the way they need!
3. Then lay out the grated egg whites. We also grease this layer with sour cream and mayonnaise in equal proportions. Or only mayonnaise, if you are a fan of it.
By the way, you can prepare a mixture of mayonnaise and sour cream in advance by mixing everything in a separate bowl. Do not stir too much so that there is no residue left. It's always better to mix in extra.
And it is also very important not to overuse lubrication. We have salad with mayonnaise, not mayonnaise with salad. Sometimes they put so much mayonnaise in the salad that you can no longer taste anything else. And the salad almost floats in it. Everything is good when everything is in moderation.
4. Place a layer of grated cheese on the whites. It will also need to be lightly seasoned with dressing.
5. Now carefully, so as not to bruise, lay the egg yolk on the top layer. Sometimes this last layer is topped with pickled corn. But in this case, another layer of mayonnaise is applied to the corn.
I prefer egg yolk because it eliminates the need for extra lubrication.
We try to distribute the egg yolk so that it covers not only the top, but also the side walls.
6. Place the olives cut into halves in a circle. These are our sunflower “seeds”, so we arrange them in the appropriate order. Lightly press each half so that it holds well.
And this is our last layer. We will include chips in the salad immediately before serving. Otherwise, they will soften ahead of time and will not be crispy.
I do not add salt to any of the salad layers. Chicken breast and mushrooms were boiled in salted water. Mayonnaise and chips contain salt. And there is even more of it in chips than it should be. I just lightly peppered the chicken layer and that’s it.
But I advise you to try the mushroom layer and the chicken layer. If you boil it and there is not enough salt, then the layers should be salted to taste.
7. Place the salad in the refrigerator for at least 2 hours, but preferably 4 hours. During this time, the layers will be well saturated with the dressing, infused and slightly cooled.
Since we did not press the layers, the salad will turn out tender and airy. Since we didn’t use a lot of mayonnaise, it won’t be fatty or high in calories.
It would seem that all these are little things, but the taste of the dish depends on these little things. That is exactly what we are trying so hard for! After all, we prepare salad for our most beloved and closest people. Therefore, do not neglect the details, they are very important!
8. Before serving the salad, make petals from chips. The salad was immediately transformed, it became so beautiful and inviting! That's it... We serve it on the table, put chips on portioned plates, and salad on them. It is best to cut the salad into triangles, like cutting a cake. And also served like a cake. So that all layers remain saved.
New Year's salad "Santa Claus"
Everyone - both adults and children - expects miracles from the New Year. And who can perform these miracles? Of course Santa Claus! Therefore, let's prepare a salad in the form of his image! He will please everyone without exception.
We will need:
- crab sticks - 200 gr
- red fish (salted or smoked) - 200 gr
- rice - 1 cup
- hard cheese - 100 gr
- tomatoes - 1 piece
- bell pepper (red) - 1 pc.
- carrots, peppercorns, dill - for decoration
- mayonnaise - to taste
Preparation:
1. Boil rice in salted water and cool it.
2. Finely chop the crab sticks. Leave a little for decoration.
3. Cut the tomatoes and red bell pepper into cubes.
4. Forming a Santa Claus figure on a large flat plate, place the first layer of rice. Press it lightly with your hands. Leave some rice to decorate the fur coat.
Spread the layer with mayonnaise.
5. Our second layer will be crab meat. Place it on top of the first layer and also press lightly with your hands.
This layer should also be coated with mayonnaise.
6. Place the next layer of tomatoes and bell peppers. Where Santa Claus's face will be, leave some free space.
Coat this layer with mayonnaise too.
7. Cut out a small square of cheese. This will be an impromptu bag of gifts. Grate the rest of the cheese on a fine grater.
8. Place some of the cheese where we left space for the face.

Seafood salad “Sea Caprice”
We will need:
- shrimps (tiger) - 10 pcs.
- squid - 200 gr
- mussels without shells - 200 gr
- scallops - 200 gr
- olive oil - 100 gr
- garlic - 1 clove
- rosemary - 1-2 sprigs
- thyme - 1 sprig
- dill - 3 sprigs
- lettuce leaves -150-200 gr
For the sauce:
- balsamic vinegar -120 ml.
- sugar - 2.5 tbsp. spoons
- olive oil - 60 ml.
Preparation:
1. Let's start by preparing the sauce. Evaporate the balsamic vinegar in a frying pan until it reduces by 4 times in volume. Add sugar. Let cool. Add olive oil.
3. In a separate pan, fry seafood in oil along with garlic, rosemary, thyme and dill. Fry for 3-4 minutes, stirring constantly.
4. Let cool.
5. Place lettuce leaves on a large flat dish. Place seafood on them and pour sauce over them.
That's it! The salad is prepared quickly, but it turns out tasty and low in calories. In addition, it also fully corresponds to the wishes of the menu.
Well, it's time to move on to the main dishes.
Duck with apples and prunes “New Year’s Tale”
We will need:
- duck - 1.5 kg
- sweet and sour apples - 3-4 pcs.
- prunes - 250 gr
- sugar - 1 tbsp. spoon
- thyme - 1 sprig
- salt, ground black pepper - to taste
For the gravy:
- chicken broth - 2 cups
- flour - 1 tbsp. spoon
- vodka - 15 ml.
- red currant jelly - 1 tbsp. spoon
Preparation:
1. Rinse the duck, drain and dry with a paper towel. Rub it with salt and pepper. Let stand for 1 hour.
2. Rinse the prunes with water and scald with boiling water, then drain the water. Cut the apples into small pieces. Combine with prunes. Add sugar and thyme.
3. Fill the duck with stuffing. Secure with toothpicks. Pierce the skin in several places.
4. Preheat the oven to 190 degrees. Place the duck breast side down on a baking sheet. Bake for 1-1.5 hours, depending on the size of the duck and the features of the oven.
5. Get the duck. Drain the evaporated fat from the baking sheet. Pour it into a frying pan and put it on fire. Add flour, stir, fry until slightly thickened. Add vodka, stir. Then add broth and jelly.
6. Simmer the gravy over low heat until thickened.
7. Divide the duck into portions. Place nicely on a plate and pour over the gravy.
8. Garnish with fresh herbs, tomatoes and apples.
According to the same recipe, duck can be cooked without gravy. In this case, when ready, simply take it out, put it on a dish and decorate as your imagination dictates.
But I’ll say right away that duck turns out much tastier with gravy. And what’s important is that it doesn’t have its specific smell at all. The dish itself turns out chic and truly festive.

Beef Wellington - a classic English dish
This gorgeous recipe caught my eye quite recently. This is the recipe of the world-famous British chef Gordon Ramsay.And for the New Year, this dish will be simply a real culinary masterpiece!
This dish does not cook quickly. It will take 2 hours to cook it.
We will need (for 8 servings):
- fresh beef tenderloin - 700 gr
- champignons - 400 gr
- dry porcini mushrooms -50 gr
- onion - 1 head (small)
- puff pastry - 250 gr
- thyme - 1 sprig
- salt, pepper - to taste
- egg yolk - for greasing
Preparation:
1. Rinse the meat thoroughly and dry it. Cut off the films.
2. Fry in a hot frying pan until a crust forms.
3. Pour boiling water over dry porcini mushrooms and let sit for 15 minutes. Cut the champignons into small pieces. Drain the water from the porcini mushrooms and chop them too.
4. Cut the onion into small cubes. Fry the mushrooms and onions in a frying pan, adding a sprig of thyme. Fry until done.
5. Then transfer to a blender and grind, but so that the mushrooms are not in a puree state.
6. Roll out the dough to a thickness of 3-4 mm. Place some of the mushrooms on it. Salt and pepper the meat and place it on top of the mushrooms. Place mushrooms and onions in an even layer around the meat.

Step 4. The bottom of the salad bowl should be covered with cling film, and the first layer should be pre-cooked and diced potatoes, greased with mayonnaise.
Step 5. Diced pickles should be placed in a second layer.
Step 6. Chicken fillet should be cut into cubes, placed in a third layer and coated with mayonnaise.

- If you bake in a mold, fill it a quarter full with water and cover the fish with a lid.
If you want a lighter, less calorie dish, wrap the salmon in foil. - Sprinkle basil on top.
- Bake for 25 minutes. If you want to achieve a golden crust effect, open the lid and simmer for another 10 minutes.
Pork schnitzel for the holiday table
Ingredients for 4 servings:
- 4 slices (150 - g) loin,
- 1 cup flour,
- 2 eggs
- 2 cups breadcrumbs,
- salt, pepper,
- butter and vegetable oil for frying.
You will need clamps for roasting meat.
Preparation:
- Salt 1.5 cm thick pieces of pork and place in the freezer for 15-20 minutes.
- Remove the chilled meat and pepper.
- Roll in flour and lightly beaten eggs.
- Place meat in roasting clamps.
- Heat a frying pan and add sunflower oil and a tablespoon of butter.
- Fry the meat directly in the clamps on both sides for about 2-3 minutes.
The dish should be served hot immediately.
What New Year's snacks will the Rooster like on the eve of 2017?

- 1 shallot (can be replaced with regular onion, but not bitter onion),
- half a cucumber,
- half a red chili pepper
- juice of 1 limes,
- 1-2 tablespoons sunflower or olive oil,
- a quarter teaspoon of salt,
- 2 tablespoons fresh cilantro.
Preparation:
- If your shrimp (crabs) are frozen, defrost them at room temperature or place in a colander with water.
- Then cut into small pieces.
- Peel and finely chop the onion.
- Cut the cucumber and chop it into slices or small cubes.
- Remove the seeds from the chili pepper and finely chop.
- Mix all the ingredients, adding lemon juice, oil, salt and finely chopped cilantro.
- Cut the avocado in half and remove the pits.
- Place the filling into the avocado.
- Top with cilantro.
Serve as an appetizer or as part of other dishes.
Cucumber rolls with bacon (or cheese)
Ingredients for 4 servings:
- lard (or cheese) - 170 g,
- cucumber - 1 piece,
- fresh parsley.
For this recipe, you will need skewers to secure the finished rolls. They can be wooden or plastic, in the shape of a simple stick and with a textured tip: the main thing is that they are long enough!
Preparation:
- Slice the bacon into thin slices if you bought it in chunks.
- Fry the bacon on both sides until crispy.
- Chop the cucumber into thin strips that will roll up and not break. Long-fruited varieties are best suited for this.
- Place fried bacon on the cucumber, roll it tightly and secure with a skewer.
- Garnish with fresh parsley and feel free to decorate your holiday table with this appetizer!

- aioli sauce for dressing (or regular mayonnaise).
Traditional cooking method: cut into small cubes and mix. But the design may be different. You can put it in a large salad bowl. Or you can serve it separately for each guest in a bowl or glass.
Light salad with tuna and mozzarella

- 1 head of iceberg lettuce (about 200-300 g), or any other,
- 200-250 g mozzarella,
- 1-2 ripe medium-sized tomatoes (or cherry tomatoes),

For filling:
- 4 tablespoons olive oil,
- 1 tablespoon Dijon mustard,
- 2 tablespoons white wine or apple cider vinegar
- large clove of garlic (or two small ones),
- salt and pepper.
Preparation:
- In a bowl, mix the grated garlic with the filling ingredients until a homogeneous emulsion is formed.
- Chop the salad into large pieces.
- Add chopped tomatoes, mozzarella and tuna (be sure to drain the juice!).
- Mix everything and serve.
